Nasi Lemak

Bertahun2 dah buat nasik lemak. Baru2 ni buat sambal ikut resepi Kak Liza. Macam tu rupanya buat sambal tumis ....walaupun rupa tiada, sambal pun jauh dari pass, tapi rasa dia memang bestlah..


NASI LEMAK


bahan2
1 kg beras AAA [basuh n toskan]
1 liter santan [5 cawan santan]
3 helai daun pandan koyakkan dan simpul]
3 keping hirisan halia
3 ulas bwg merah [mayangkan]
garam secukupnya
sedikit gula jika suka

Cara
1. Masukan semua bahan dlam periuk dan masak sehingga beras sebati dengan santan.
2. Bila nampak nasi kering, kacau rata dan tutup semula tudung. Biarkan ia sentiasa panas dalam periuk rice cooker.
3. Bila telah masak hidangkan bersama sambal tumis ikan bilis, telur rebus, ikan bilis goreng, ulam timun dan kangkung rebus.


SAMBAL TUMIS IKAN BILIS

Bahan
250 gm ikan bilis [bersihkan dan buangkan kepala dan rendamkan sebentar]
1 senduk cili kering mesin ]
3 labu bawang besar ] dimesin halus
sket belacan ]
1 cawan air asam jawa
2 labu bawang besar..mayang kasar
garam
gula
minyak untuk tumis

Cara
1. Tumiskan bahan yg dimesin halus sehingga wangi.
2. Masukkan air asam , ikan bilis, garam, gula dan bawang besar.
3. Masukkan air sedikit dan biarkan sambal mendideh dan pekat dengan api perlahan.
4. Bila dah naik minyak baru angkat.

Mi Kari

MEE KARI

Bahan
1 kg mee kuning [celur dan toskan]
Taugeh [buangkan kaki/akarnya]
Bawang goreng

Bahan Hiris/potong kecil
Tahu [gorengkan]
Daun bawang & daun sup
Cili merah
Limau kasturi/limau nipis

Bahan Kuah:
1/2 kg ayam...potong kecil
200 gm udang
1 paket chicken ball
1 paket fish cake [potong nipis]
2 s/b cili mesin
3 s/b rempah kari dibancuh dgn skit air asam jawa
5 cawan santan..(1 biji kelapa)
minyak
garam


Bahan mesin
2 batang serai
1 inci halia
1/2 inci lengkuas
5 ulas bawang kecil
2 ulas bawang putih

Cara Memasak Kuah:
1. Tumiskan bahan yang dimesin sehingga wangi dan garing. Masukkan rempah..biarkan naik minyak.
2. Masukkan ayam.. fish cake..dan chicken ball dan santan..renehkan sehingga naik minyak.
3. Hidangkan bersama mee yang telah dicelur dan bahan yang dihiris tadi.

Mi Hailam

MEE HAILAM

Bahan-Bahan:
600 gm mee kuning
100 gm daging [hiris nipis]
100 gm isi ayam [hiris nipis]
100 gm udang
250 gm sawi hijau [potong kecil]
100 gm bunga kubis [hiris]
100 gm kobis [hiiris]
2 biji telur ayam
1 biji cili merah [mayang]
1 s/b lada hitam
3 s/b kicap pekat
3 s/b sos tomato
3 sudu besar minyak
1 cawan air
4 ulas bawang putih [ketuk]

bahan hias
3 batang daun sup ]
3 batang daun bawang ] potong pendek
garam [jika perlu]

Cara:
1. Panaskan minyak dan tumiskan bawang putih sehingga wangi.
2. Masukkan daging dan air. Biarkan sehingga lembut.
3. Bila daging dah lembut masukkan ayam dan udang. Kacau rata.
4. Masukkan kicap, sos tomato, lada hitam dan mee kuning . Kacau rata.
5. Masukkan bahan sayuran lain dan telur. Biarkan telur keras dan kacau perlahan-lahan.
6. Angkat dan masukkan dalam pinggan dan taburkan daun sup & daun bawang.

Fried Macaroni

nampak sedap.. tapi TAKKKKK .. macaroni tu buatan Pakistan... rasa tepunggggg je ...

tapi garnish dia memang sedap !!!


FRIED MACARONI

Ingredients :

500g macaroni
Minced meat
3 tablespoons chilli paste
5 shallots
2 garlics
1 teaspoon cummin seeds ~ pounded
1 1/2 tablespoons tomato sauce
2 tablespoons oyster sauce
1 tablespoon sugar
salt to taste
Vegetables

Method :

1. Boil macaroni with a bit of oil till al denti. When the macaroni is done, drain it in a colander.
2. Heat oil in a wok. Add in the chilli paste. Fry till fragrant.
3. Add in pounded shallots, garlics and cummin seeds.
4. Add a bit of water if it becomes too dry.
5. Add in tomato sauce.
6. Add in oyster sauce
7. Add in sugar and salt.
8. Add in minced meat. Stir till the meat is cooked.
9. Add in the vegetables.
10. Stir in the boiled macaroni till well mixed.
11. Remove from heat, garnish with chopped spring onions, fried sliced onions and sliced red chillies.

Note :
1. The amount of each ingredients used may vary according to one's taste.
2. Al denti means cooked just until it can be cut through with the edge of a fork or bitten through with the teeth
